Meteora monasteries require the use of stairs in order to reach them. Most of the monasteries have lots of stairs, which may prove difficult for your mother. On day 1, you participate on the sunset tour, which does not require any stairs since the monastery we visit is the monastery of St Stephen, the most accessible one. The next day you get to choose between either the hiking tour (4.5 hrs in total the duration of the activity, about 7km in total walking distance and 200m the elevation gain), or the sightseeing tour where you enter inside 3 monasteries.

The starting point is confusing since the tour begins in Athens at the Athens 'Larissa' Railway Station at 07:20 am... Yet, the tour operator is saying something else...

The tour starts in Athens, where you will catch the morning train to Kalambaka at 7:57am. We will meet you in Kalampaka when you arrive to take you to your hotel.

Should we take the train or rent a car and drive? If we take the train, is there a train which leaves Kalambaka earlier than 17-18:00? I am a little concerned about arriving back to Athens very late

It depends on your preferences if you will take a car or travel by train. The package includes round-trip train tickets. There is a train that departs from Kalampaka at 9:30 am, you switch trains in Paleofarsalos and arrive in Athens at 13:03. The next train departs from Kalampaka at 13:22, you switch trains in Paleofarsalos and arrive in Athens approximately at 17:30.
