- Day 1
Toulouse
You'll head to Toulouse on your own, arriving in the 'pink city' known for its distinctive red brick buildings throughout the center. Start by walking around the main areas and checking out the local restaurant scene, which has plenty of options. The key spots you'll want to see include Place du Capitol in the heart of the city, St. Sernin Cathedral with its Romanesque architecture, and the Couvent des Jacobins from the 13th century. Plan to spend time wandering the streets and soaking in the atmosphere of this southern French city.

- Day 2
Toulouse to Castelnaudary
Starting early, you'll cycle out from Toulouse crossing the Paul Riquet Bridge and heading onto the Canal du Midi towpath. The ride takes you through countryside with softer, pastel-colored landscapes and traditional barges along the water. You'll pass through the medieval village of Avignonet where there are crusader statues and churches worth stopping to see. The route continues to Narouze watershed, which marks the highest point of the canal and the geographical divide between the Atlantic and Mediterranean waters. After that, you'll head downhill toward Castelnaudary for the evening.

- Day 3
Castelnaudary to Carcassonne
From Castelnaudary, you'll cycle along the historic thousand-year-old canal towpath heading toward Carcassonne. The Montagne Noire and Pyrenees mountains frame the route on both sides as you go. Along the way, the landscape shifts from open cornfields into vineyards, and you'll come across several small villages plus old waterworks including Béteil, the Lalande sluice, Cugarel mill, Villepinte dam, and the Rebenty aqueduct. These structures show off Paul Riquet's engineering work from centuries back. By late afternoon you'll arrive in Carcassonne with its hilltop fortress and the lower Bastide St. Jean neighborhood to explore.
