- Day 1
Dublin
You'll arrive at the Shelbourne Hotel on St Stephen's Green and meet your tour director. A local guide takes you on a walking tour through Dublin's streets, pointing out grand architecture and historic pubs along the way. The tour wraps up at the Little Museum of Dublin, housed in a Georgian townhouse. Back at your hotel, you'll have a welcome drink with the rest of your group.

Dublin
Head to Jameson Bow St. Distillery in Smithfield to learn about the company's history going back to 1780. You'll taste three whiskeys from their portfolio and check out their maturation warehouse for a barrel tasting. Lunch happens at Roly's Bistro over in Ballsbridge, and then your afternoon is free to wander around Dublin on your own.

Dublin to Kilkenny
This morning you're heading to County Wicklow for a baking session at Ballyknocken Cookery School, where celebrity chef Catherine Fulvio will teach you how to make traditional Irish scones. After that, you'll tour Russborough House, a beautiful Georgian home with art spanning Renaissance to the 20th century. Next comes a falconry demonstration with birds of prey. Later you'll travel to Kilkenny and have dinner at Lyrath Estate Hotel & Spa.

Kilkenny to Cork

Lunch is at Mikey Ryan's Bar at Cashel Palace Hotel, serving local and seasonal dishes. In the afternoon, you'll check out Cahir Castle, one of Ireland's largest castles and in really good condition. Travel to Cork for dinner at Hayfield Manor.

A local guide shows you around the colorful coastal town of Kinsale, talking through its history and the Spanish Armada battle. Later you'll drive to Killarney and take a classic jaunting car ride through Killarney National Park to see the scenic ruins of Ross Castle. You're staying at the Europe Hotel & Resort and dining at the award-winning Rozzers Restaurant.

From there, you'll travel to Dromoland Castle Hotel, the ancestral home of the O'Briens, where you can relax in elegant surroundings. Enjoy a drink and award-winning cuisine in the oak-paneled dining room.

You'll spend your final night at the College Green Hotel in Dublin's center.
