Is there a van supporting every day in case one of us is struggling? We do cycle regularly. Presumably we need to book our own accommodation in Ho Chi Min on the last night?

There is van supporting all the time. You can hop on and hop off the van anytime when tired or you want to rest for a short transfer etc... For the last night in HCM city, you can book your own hotel and we will drop you at your hotel in HCMC. Our tour price don't include hotel in HoChiMinh.
