You'll meet up in Bari and then drive to Ostuni, a white-washed hilltop town with narrow streets that overlook olive groves below. After checking into Masseria Salamina, a 17th-century fortified farm surrounded by olive and fig trees, you'll settle in and have your first dinner featuring local Pugliese dishes paired with regional wine.

Ostuni
This morning starts relaxed as you tour the 400-year-old farm and its historic citrus garden. You'll watch a cheesemaker work through traditional mozzarella production using milk from herds nearby, and taste regional wines. Later, a hands-on cooking session focuses on typical Puglia dishes with seasonal ingredients, and you'll eat lunch together afterward from what you've prepared.

You head to Alberobello, a UNESCO site known for its cone-roofed trulli houses built 300 to 400 years ago. Walking the narrow streets, you'll learn about the cryptic symbols painted on rooftops and have time to shop around. From there, you'll travel to Polignano a Mare, a coastal town perched above turquoise waters, where lunch features Adriatic seafood at a waterfront location.

Ostuni
Early on, you'll go to the local weekly market with your chef to pick out fresh seasonal produce grown within the region. Back at the property, you'll harvest vegetables and herbs from the garden, then prepare and share lunch together. In the afternoon, visit an organic extra virgin olive oil farm with ancient Roman agricultural traces, where you'll taste and compare different olive oil varieties made on site.

Today you travel to Matera in Basilicata, one of the world's oldest settlements with Bronze Age cave dwellings still visible. A local guide shows you the sassi cave area, a typical rock-carved house, and a Byzantine church carved directly from stone. After lunch with Basilicata specialties, you'll return to the masseria for the evening, when you and your chef prepare traditional seafood dishes from the Puglia coast.

The afternoon is free to relax, then you head out for your final dinner at a Michelin-starred restaurant that serves modern takes on local Pugliese ingredients.
