Sample some of the best in Israeli cuisine from the fresh fish to the confectionery delight that is halva. <\/span>Stop by Thursday evenings to experience the excitement of pre-Shabbat rush. <\/span><\/p>\n

New York\u2019s East Village has nothing on Tel Aviv\u2019s Florentin district. With all of the charm and none of the pretension, Florentin is Tel Aviv\u2019s latest up and coming neighbourhood. The location of this medium-sized neighbourhood is key to its appeal as it\u2019s very well connected by foot to both Jaffa and downtown Tel Aviv. <\/span><\/p>\n

If you\u2019re like me and you dream of enjoying the experience of clubbing but instead find yourself choosing to patron a low-key bar sampling Palestinian craft brews…well again, this neighbourhood is the one for you. On nearly every block you\u2019ll see some unique street art. <\/span><\/p>\n

Even if graffiti isn\u2019t your thing you\u2019ll appreciate the political passion and frustration in many of the tags…everything from a stencil of a murdered Palestinian to a deflated Homer Simpson. Check out the Shuk HaCarmel or the Beit Ha\u2019ir Museum only a 20 minute walk from Florentin and 5 minutes from one another. <\/span><\/p>\n

Pro-tip: You will witness the magic of tea like never before on the corner of HaShuk and Levinsky Street. Seriously, they have a magician or wizard or something dedicated to crafting the most beautiful and delicious hot and iced teas you\u2019ll ever have the privilege of drinking. You know you\u2019re in the right spot when you find the small pick-up truck with a gaggle of hipsters seated in the back.<\/span><\/p>\n

\"Florentin-Tel-Aviv\"<\/p>\n

Bet Guvrin National Park, Judean Lowlands<\/strong><\/h2>\n

You\u2019ll most likely need a car to get to this one but believe me when I say it\u2019s worth the rental fees. Bet Guvrin National Park is truly a sight to behold, so much so that I can\u2019t believe Israeli Immigration doesn\u2019t hand you a pamphlet for this park upon entry to the country. <\/span><\/p>\n

The park, formerly the biblical City of Maresha, is located in the heart of the Judean lowlands and the aesthetic is somewhat similar to the rolling green hills of Wales or Scotland. However, the true discoveries and \u201cawe\u201d moments will be found underground in the complex and endlessly impressive networks of caves built during the Byzantine Empire. <\/span><\/p>\n

Whereas the Old City you\u2019ll see in Jerusalem today is in reality only approximately 200 years old, this ancient city was constructed over 2000 years ago during the First Temple Period. The park was only designated a UNESCO World Heritage Site in 2014 so even the United Nations only recently picked up on the hidden wonders of the ancient City of Maresha. \u00a0Pro-tip: As this park is easily a full day experience, you may very well run out of time to explore it all. <\/span><\/p>\n

Do yourself a favour and make Cave #7 \u2018Maze Cave\u2019 a priority. It\u2019s the largest and most visceral experience that all of the caves have to offer. You\u2019ll find yourself crouching and sidestepping through gaps in the soft, chalk-covered rocks so it\u2019s worth noting that it will be challenging for the less able-bodied person. <\/span><\/p>\n

\"Bet-Guvrin-National-Park-Judean-Lowlands\"<\/p>\n

In the end, you\u2019re of course going to complete your trip to Israel with a visit to the Dead Sea or Mount of Olives but there\u2019s something to be said for exploring the roads less travelled. Only once you deviate from the standard \u201cmust-see\u201d sites are you going to make memories all of your own and meet the locals with the unique stories to share.
