We had a fantastic guide Edwin who was very knowledgable, positive and thoughtful.
There are a lot of free time and not so many "included activities" so you end up spending a lot more $$ whilst on the trip depending on what kind of optional activities you choose.
The highlight from the organised trips for me was the Palenque ruins, surrounded by lush jungles.
Out of the optional trips we organised ourselves my favourite was Yaxche ruins (organised whilst on the Island of Flores) - this is where the original STAR WARS filmed a scene as well as the guatemala survivor show.
The ATM cave in San Ignacio is a must for adventurers (but not for people with weak knees and people afraid of the dark and wet.)
If you opt for tube riding in San Ignacio, the tube riding itself was a little slow (too relaxed - and nothing like the one in Laos) for me but if you do it, please make sure you also do the "crystal caves" this was beautiful and makes the tubing experience special.
In Caye Caulker, scuba diving in the Great blue hole (we used Belize diving services and they have excellent gear and very professioanl) and swimming with sharks in "Shark Rey Alley" on a snorkel tour was amazing.
Back in Mexico make sure you visit as many cenotes as you can. Every cenote is different and has it's own unique characteristic. We scuba dived "Dos Ojos" (great for any certified diver) and the "Pit", "Pet cemetary" and "Dreamgate". The last three sites are recommended only for advanced divers or divers who want to see something truly unique.
All in all, I thought this trip is about what you make of it yourself as there are many free days for you to organise your own activities.
It was great to be in the tour as you had other members you can share stories with, and you didn't have to worry about the hassle of border crossings and mode of transport.
